Drivers!!!

Have to vent my frustration for drivers in this town. A little back up history, the Logan police have started busting people for not stopping for pedestrians its a huge problem here. Anyway driving home from work today there was a girl trying to cross the road on her bike so I stopped at the intersection waving her across, I don't want a ticket!! She had to wait cause a car was coming the other way, mean while a line of cars came from behind me and proceeded to pass me on the left.... making it so the girl had to continue to wait and I ended up just sitting in the middle of the road. I didn't have my blinker on so people should have know I wasn't turning, but being in Cache Valley blinkers mean nothing so they thought I was like everyone else just turning illegally. 3 minutes later the poor girl finally got to cross the street and I was able to proceed on my way home. GGRRR. Guess that's what I get for trying to obey the law sitting in my hot car! oh well, the girl got to cross the road.

A Day at the Beach

Today we actually had a little time of work so we headed to Bear Lake and meet up with my Grandma Nash, Aunts Camille & Julie and cousins Natalie, Taya, Cason, Robert & Ryan. Unfortunately we got stuck behind the slow drivers in the canyon and got there as Julie was getting ready to leave with Taya, Cason & Robert. Robert had to milk and Cason & Taya had a piano recital. We got a few minutes to see them before they took off. We decided to continue playing in the beautiful "Caribbean of the Rockies" Good Times!!!

No trip would be complete with out a stop for ice cream & fries and the Bear Cave. Ryan even shared his ice cream he so nice! Actually it was just a "little" big for him.

We also discovered Natalie has an extreme love of fry sauce.......yes she is actually licking the container clean. She can never move out of Idaho or Utah!! She'd go crazy!

Mark's Grillin'

Mark made us some fabulous grilled tuna tonight for dinner, it was sssoooooooo good!! I'd never had fresh tuna before but after tonight I think it is among my favorites for fish. I've included the marinade he used....its excellent.


*Mark's fish was compared to a fine restaurant, I think it was much better!*

Marinade:
1 cup soy sauce
1/2 cup lemon juice
1 clove crushed garlic (for each steak)
4 tablespoons extra virgin olive oil
small amount of sea salt, to taste
fresh ground black pepper, to taste

In a shallow 9 X 13 inch glass dish, prepare all of the
marinade ingredients. Remember, if you have more than 2 8
oz tuna steaks, you might need to adjust the ingredients to
marinate. Marinate both sides (dredge steaks and get
marinade on both sides). Let sit in refrigerator for 30
minutes before grilling. *Soy sauce will overpower tuna if
you marinate for too long!
Grill for 4 minutes or less per side for 1 inch steaks,
depending on how you like them. Steaks should be firm with
pink in the middle. If you prefer steaks to be more rare,
grilling time should be 2 1/2 minutes on each side.

*the recipe was doubled for the amount of fish we had, we had 32oz of tuna*
*we served it with grilled corn, grapes & raspberry salad...the guys loved it*

Yum.....


New Recipe.............

BANANA PUDDING CAKE

1 or 2 small ripe bananas
1 pkg. yellow cake mix
1 pkg. banana cream or vanilla pudding, small box
4 eggs
1 c. water
1/4 c. oil
1/2 c. chocolate chips

Slice bananas into large mixer bowl, beat until well mashed.
Add remaining ingredients. Blend; then beat at medium speed
for 2 minutes, pour into well greased and floured 10 inch
tube pan or Bundt pan. Bake at 350 degrees for 60-70
minutes. Cool in pan at least 15 minutes. Remove from pan,
finish cooling on rack, sprinkle with powdered sugar if
desired. NOTE: Cake can be baked in a 13 x 9 inch pan for
50 to 55 minutes. Serves 8-10.

CHOCOLATE GLAZE:

2 (1 oz.) squares unsweetened chocolate
3 tbsp. butter
1 c. powdered sugar
3/4 tsp. vanilla

Heat over low heat until melted. Remove from heat. Stir in 1
cup powdered sugar and 3/4 teaspoon vanilla. Stir in 1
teaspoon hot water at a time until desired consistency it took me 3 tablespoons.
